DAIOS COVE BARS IN CRETE WELCOME FEDERICO PAVAN

Visiting mixologist at the Cove, Federico Pavan is Director of Mixology of the signature Donovan Bar at Brown’s Hotel in London. Federico Pavan grew up in a small village outside Verona, Northern Italy. In 2009, he travelled to Madrid in Spain where he joined the renowned ME Hotel as Head Bartender. After four years of meticulously mastering classic cocktails with a contemporary twist and studying vintage spirits, Pavan worked with world-class mixologist Salvatore Calabrese and trained alongside Japanese mixology expert Hidetsugu Ueno at High Five Bar in Tokyo. In 2015 Pavan headed the Coburg Bar at The Connaught Hotel as Head Bartender before joining the iconic Donovan Bar, a bar steeped in heritage, elegance and sophistication. Right hand man to Salvatore Calabrese, Federico Pavan is the soul behind the menu and precision behind the bar.
